Our outstanding Cheddar is the best of the best, the cheese that our grandmother Ivy kept back for her own table. Now the world’s first carbon neutral Cheddar, it’s still made to the recipe she perfected almost a century ago, specially selected and aged for up to 18 months under wood until it takes on a very particular creaminess, complexity of flavour and nutty, rounded finish.

We suggest you serve Ivy’s Reserve as our grandmother Ivy did at home: as simply as possible. Ivy often sliced it with fruit or added chutneys and pickles, along with a slice of her own homebaked bread. We also recommend sourdough crackers to bring out its natural sweetness. To drink, Ivy’s is perfectly complemented by a full-bodied red wine or a glass of Somerset cider.
