For the Butter Board:
250g / 8oz Ivy’s Reserve Farmhouse Salted Butter, softened
1 Small Baguette or Rustic Bread, sliced
Crackers or Seeded Crispbreads
For the Maple-Candied Pecans:
75g Pecans, roughly chopped
1 tbsp Maple Syrup
½ tsp Ground Cinnamon
Pinch of Sea Salt
For the Smoky BBQ Honey:
2 tbsp Runny Honey
1 tsp BBQ Sauce
¼ tsp Smoked Paprika
For the Sweetcorn Salsa:
100g Sweetcorn, drained if canned
½ Red Chilli, finely chopped
1 Spring Onion, finely sliced
½ tbsp Lime Juice
½ tbsp Olive Oil
Fresh Coriander, small handful, chopped
1. Make the maple-candied pecans: Toast the pecans in a dry frying pan over medium heat for 2 minutes until they smell sweet. Drizzle over the maple syrup, sprinkle in the cinnamon and sea salt, and stir for another minute until caramelized. Transfer to a baking sheet, spread out and leave them to cool.
2. Mix the smoky BBQ honey: In a small bowl, mix the honey, BBQ sauce, and smoked paprika. Stir well and set aside until ready to serve.
3. Prepare the sweetcorn salsa: In a bowl, mix the sweetcorn, red chilli, spring onion, lime juice, olive oil and coriander. Stir well, season to taste, and set aside.
4. Build the butter board: Spread the softened Ivy’s Reserve Farmhouse Salted Butter across a wooden board in thick swirls. Scatter the maple-candied pecans over the top, followed by a drizzle of smoky BBQ honey. Spoon the sweetcorn salsa over the butter, adding pops of vibrant colour and fresh flavour.
5. Serve & enjoy: Place the board at the centre of your table and serve with fresh baguette, crackers or crispbreads for dipping and spreading.
Top tips
· Make the butter shine – Take the butter out of the fridge 30 minutes before serving so it’s perfectly spreadable and melts beautifully onto warm bread.
· Easy swaps – Try chopped walnuts or almonds instead of pecans. Swap the sweetcorn salsa for a fresh tomato or avocado salsa instead.
· Add some crunch – Serve with a mix of crisp breads, grissini or even toasted cornbread for extra texture.
· Make it a feast – Pair with a selected of cheeses, cured meats or fresh fruit like apple slices to create a bigger grazing board.
· Play with heat – Add a pinch of chilli flakes to the BBQ honey or sprinkle over the butter, with a drizzle of olive oil.
